I was not aware of the "Set as default profile" option ... which seems to provide what I was asking for.

For a 5250 emulation session, what you are asking for is available. When opening a 5250 session, which you want to use as a template. In the menu "Communication" you have the option "Set as default profile".
As I do not use printer emulation, I am not sure how it works but doing a quick test showed that the option is available at the same place, there too.

Actually as regards this one, most of that stuff is already there. It's just not documented.
If someone were very interested in this, it should be possible to write a shell script that would create a templated session.
Recursive spelunking in iAccessClient/Settings/client.configuration sheds some light on this matter.
